Matcha Christmas Tree Cookies - Matcha Oishii

Ingredients

2 3/4 Cups of All Purpose Flour

1 tsp Baking Soda

1/2 tsp Baking Powder

1 Cup Butter, Softened

1 1/2 Cups of Sugar

1 Egg

1 tsp Vanilla Extract

2 Tbsp organic Matcha Oishii powder

Coconut to sprinkle as snow, or powdered sugar

METHOD

To make these matcha christmas cookies, in a bowl and stir together the flour, baking soda,organic Matcha Oishii powder and baking powder.

In another bowl, cream together the softened butter and sugar until they are well mixed together, and it has a smooth consistency.

Slowly beat in the egg, vanilla, and the dry ingredients.

Once you have an even consitency of the matcha christmas cookies mix, knead the matcha dough and start to cut it into the desired shape. If you do not have these cookie cutter shape, you can do round cookies and simply stack them all together, too.

Bake matcha cookies for 10 minutes at 190C in the preheated oven.

Let cool for 5 minutes in a cooling rack.

Now, stack your matcha christmas tree cookies! And, if you want to give it a snowy look, sprinkle shredded coconut on top, or powdered sugar! You can add a little bit of frosting on top and add your favorite star like food, almonds, gummies or marshmallows are all great ideas!

Vegan Matcha Cookies Recipe - Matcha Oishii

Ingredients

125 gr Buckwheat Flour

75 gr Almond Flour

60 gr (raw) Cane Sugar

2 tsp Gingerbread Spice

1 flax egg (1 tbsp ground flax seeds + 2 tbsp water)

35 gr Vegan Butter

2 Tbsp Water

25gr Vegan White Chocolate

Almonds to decorate

2 Tbsp Shredded Coconut or Powdered Sugar to Sprinkle as Snow

2 Tbsp organic Matcha Oishii powder

METHOD

Vegan Matcha Christmas Cookies Recipe - Matcha Oishii

To make these vegan matcha christmas cookies, first prepare the flax egg.

Then, mix together the dry ingredients, do not forget to add your organic Matcha Oishii powder in here! 

In a different bowl, mix together flax egg, water and melted butter. Slowly incorporate the dry ingredients, and beat them until you have a nice consitency in your vegan matcha dough. 

Add extra butter/oil/water if too dry.

Roll out the vegan matcha dough between two parchment papers until 1/2 cm / 1/4 inch thickness.

Preheat oven to 175C and line a baking sheet with parchment paper.

Cut out vegan matcha christmas cookies using a cookie cutter.

Place them on the baking sheet and bake for 7 min. 

Allow for the vegan matcha cookies to cool down before stacking up.

Melt the vegan chocolate. Drop some on each stack and place an almond on top. (Hold until it sets!)

Lastly, sprinkle coconut or powdered sugar to give it a snow-like feeling.
