METHOD

To make the most delicious cherry blossom cheesecake sakura cake start by making the crust. Because you will need to freeze it.

Preheat your oven at 180°C.

For the Crust

Start by selecting a cheesecake mold or round mold that is approximately 25 x 5 cm.

Make the crust by stirring together all of the crust ingredients, mixing until well combined.

Press the crumbs into the bottom of the mold. Make sure you make this as even as possible, in order to have a nice flat sakura cheesecake.

Freeze this while you make the sakura cheesecake filling.

For the Filling of the Cherry Blossom Cheesecake Sakura Cake

Make the cherry blossom cheesecake filling by mixing together the Sakura powder, the sugar and the cream cheese until they're well incorporated. This can be done with a stand mixer, hand mixer or by hand.

Then, mix in the eggs until you achieve a creamy and smoothy consistency.

Take out the mold with the crust from the freezer and pour the filling into the crust.

Place the cherry blossom cheesecake sakura cake in the oven, and bake it for 20 minutes.

Then, cover the cherry blossom cheesecake with aluminum foil to avoid browning on top. Bake for an additional 10 minutes. You will only bake the cherry blossom cheesecake for a total of 30 minutes.

Remove the cherry blossom cheesecake sakura cake from the oven, and place it on top of a cooling rack. Once the sakura cake is cool, refrigerate the cherry blossom cheesecake, covered on top with aluminum foil.

Take out of the refrigerator right before serving so that the cherry blossom cheesecake sakura cake is cool and has a nice consistency.
