Matcha Cheesecake Basque

Basque cheesecake is a bit different from regular cheesecake because unlike the traditional New York cheesecake that is characterized for being dense and silky smooth, burnt Basque cheesecake is light, is caramelized due to baking it at high temperatures and has a gooey interior.  

This time, we are giving you the recipe of an awesome burnt Basque matcha cheesecake, so bringing together the best of both cultures, Spanish and Japanese. Traditional burnt Basque cheesecake originated in San Sebastian, Spain, but combining that deliciousness with our green matcha powder has taken this to celestial yummyness.

MATCHA CHEESECAKE BASQUE RECIPE

Servings:  1

Prep time:   30 min                                                                                            

Total time:  30 min preparation time, plus cooling and 3 hr refrigeration time 


INGREDIENTS

250gr Cream Cheese, at room temperature

55gr White Sugar 

10gr Cake Flour

Pinch of Salt

1 Whole Egg plus 1 Egg Yolk

165gr Whipping Cream

8gr organic Matcha Oishii green tea powder

 


Optional Decoration on Top

Mascarpone Whipped Cream for Decoration


250gr Mascarpone Cheese

80gr Sweetened Condensed Milk

130gr Whipping Cream

3gr Vanilla Extract

Dark Chocolate, Melted (for the eyes and mouth)

3gr Matcha Oishii powder

DIRECTIONS

1. Start by preheating your oven to 220°C
2. Meanwhile, let's make the matcha cheesecake Basque filling. So, in a large bowl, add the cream cheese, sugar, and salt, and mix well
3. Sift in that bowl, the cake flour and matcha powder, make sure that it is all really well combined
4. Pour in the eggs and mix
5. Then add the whipping cream, and mix until it is all really nicely and evenly green
6. Line the 6" cake pan with parchment paper so the matcha cheesecake does not stick to the pan
7. Pour the matcha cheesecake Basque batter into the mold
8. Bang on the countertop to remove air bubbles
9. Bake the matcha cheesecake for around 30 minutes, or until the top has turned golden brown
10. Let it cool down completely, we know it is hard to resist, but please do refrigerate for at least 3 hours

You can optionally decide to decorate it as in the photo by the talented Kait. But you could simply just eat it like that too and it would still be amazingly delicious.

 

Matcha Cheesecake - Matcha Oishii



Mascarpone whipped cream decoration method:


1. In a large bowl, add the mascarpone and whisk until smooth
2. Add sweetened the condensed milk, mix and put aside
3. In another bowl, add whipping cream and vanilla extract and whisk with a handmixer or standmixer, until soft peaks form
4. Bring together the whipped cream to the mascarpone mixture and mix until smooth
5. Add the matcha powder to 20g mascarpone whipped cream, make sure that the green of the matcha powder is even, and well combined

To Decorate this cute matcha cheesecake Basque, do the following:


1. Spread a thick layer of mascarpone whipped cream on top of the cooled matcha cheesecake
2. Pipe the outline of the Little Green Man, to infinity and beyond!
3. Fill it with the matcha cream and use a spatula to smoothen the cream
4. Pipe the outline again
5. Pipe the outline of the eyes and fill it with cream
6. Use melted dark chocolate to draw the facial features

This matcha cheesecake Basque is delicious even if you do not decorate it, so if you are intimidated by the cuteness of the decoration, please just skip it and eat without the top cream.
