What is Matcha Powder?
Matcha literally means powdered tea in Japanese. But, what is matcha tea? Matcha is the green tea powder from the leaf of the plant called Camellia Sinesis.
Matcha green tea powder is unique to Japan, and it has been celebrated in the traditional Japanese tea ceremony for almost a millennium. Actually, it is the only tea that is used for Japanese tea ceremony.
The Careful Process of Matcha: what is matcha tea
But what makes Matcha so unique? Well, the way of growing, harvesting and processing the leaves, which are called Tencha, is what makes Matcha green tea powder unique, and from here the different qualities of Matcha will also be determined.
Matcha begins its process with the leaves being exposed to direct sunlight, where they accumulate an enormous amount of catechins, a type of antioxidant. Later on, just before the leaves are harvested, they are covered with bamboo tarps – not all of them, some just place a screen on top, and some not at all, but good quality Matcha must be shade-grown under Tana curtains. It is precisely this, which inhibits photosynthesis in the tea leaves and allows them to produce a vast amount of chlorophyll, which explains the vibrant green color that is so characteristic of Matcha green tea.
Matcha, or better-said, good quality Matcha, really manages to create a perfect balance between bitterness and sweetness thanks to this process. While under the sun, the leaves fill with antioxidants, which brings in the pleasantly bitter flavor of Matcha. Then, it is thanks to the shade growing that good quality Matcha can reach sweet after notes, this thanks to the accumulation of amino acids while being under the shade, and that sweetness that remains in your mouth afterward is what Japanese people refer to as Umami, which in Japanese means savoriness. But, in our case, we prefer to call it “Oishii” which translates as Delicious!
